When the Amsterdam brewery was still in use, the top floor, "The Coolship," was used to cool the warm wort (malted barley with water) before the yeast was added. It was simply a matter of opening the many windows - the cool Dutch air did the rest. Nowadays, this top floor gives you a phenomenal view of the city and is the coolest space in our building to host a dinner or party.
